I’m a huge fan of both hummus and sweet potatoes so when a client of mine passed this along to me I was verrry happy and wanted to share! Sweet potatoes are really good for you (see an old Health Tip on sweet potatoes here) and hummus is just delightful!
Ingredients:
1 large sweet potato
2 cups cooked chickpeas
1/2 cup lemon juice
2 cloves garlic
1 teaspoon ground cumin
1 teaspoon ground paprika
2 tablespoons tahini
1 tablespoon olive oil
Directions:
Roast the sweet potato in the oven, wrapped in foil. Cook until it is soft and tender. Let the sweet potato cool and place all ingredients into a blender or food processor. Process until smooth.
